I love that this recipe doesn’t use any flour or grains, just 5 simple ingredients. I use coconut sugar as I try to limit our refined sugar intake, but I’m sure normal sugar will work just as well if you don’t have coconut sugar. I love how easy this recipe is and how much my kids get involved in making these cookies. Having healthier homemade treats available in your home makes leading a healthy lifestyle so much easier. Im sure you’ll be making these weekly after trying them out.
Ingredients:
- 1 cup peanut butter
- 3/4 cup coconut sugar
- 1 egg, lightly whisked
- 1 tsp vanilla essence
- 1 tsp bicarbonate of soda
Method:
- Preheat the oven to 180 C.
- Line a baking tray with baking paper.
- Start by mixing the peanut butter and coconut sugar in a mixing bowl.
- This is the perfect time for you or your little helpers to taste as there is no raw egg in the mixture yet.
- Next, crack the egg into a small bowl and give it a whisk.
- Add the lightly whisked egg, vanilla and bicarbonate of soda to the peanut butter mixture.
- Mix until all the ingredients are combined and a dough is formed.
- Scoop out 1 tablespoon of the dough and roll it into balls. I like using the measuring spoon because then all the cookies will be the same size.
- Place the balls onto the baking tray lined with baking paper. (Space them well apart as each biscuit spreads while baking).
- Press each ball down lightly with the back of a fork, to create little lines on the surface of each biscuit. This is another activity that is so good for little kids to master.
- Place the tray of biscuits in the preheated oven and bake for 10 minutes.
- Once baked, remove them from the oven and leave them to cool completely before removing from the tray.They will crumble if you pick them up while they’re still hot.
Once they are completely cool they firm up perfectly.
Store them in a jar or airtight container.
